How to Cook Okro Stew With Banku (Ghanaian cuisine)

It is a Ghanaian delicacy mostly eaten by Ga Dangme (or Ga) descent dish which is served with okra stew. It can also be eaten with hot pepper and fried fish. It also taken as lunch or super in most part of country. This delicacy can also be taken by toddlers.

Making Okro Soup

  • 7 pieces Okro
  • 2 pieces large onions
  • 200 mls red palm oil
  • 2 pieces medium-sized onions
  • tomato paste
  • 4 pieces bell pepper (kpakposhito)
  • 1 pound goat meat/chicken/herrings/crab/tuna/salmon
  • 1 pound wele
  • salt
  • 200 ml of water

INSTRUCTIONS

  1. Wash meat and wele thoroughly and placed in a neat bowl
  2. Chop meat into desirable sizes and place in a cooking pot or saucepan
  3. Add little amount of water, place over medium heat and allow it to boil
  4. Chop onions, ginger and garlic.
  5. Blend chopped vegetables and pepper together until a smooth mixture is obtained.
  6. Set some of the blended mixture aside
  7. Pour the blended mixture into the meat pot and allow it to steam for 10 minutes
  8. Add some spices
  9. Wash okro and chop into smaller pieces.
  10. Put chopped okro into a clean saucepan, add water and simmer for about 6 minutes.
  11. Turn off heat and allow it to cool
  12. Pour some palm oil into a saucepan and place over medium heat.
  13. Add sliced onion and salted fish
  14. Cook for about 4 minutes
  15. Add blended pepper, ginger and garlic and allow to simmer for about 5 minutes.
  16. Wash tomatoes, chop and add to the sauce
  17. Now add your steamed beef, boiled crab and wele to the mixture.
  18. Stir and leave it to cook for about 10 minutes.
  19. Pour into the mixture your cooked okro and stir thoroughly
  20. Add salt to taste

How to prepare the Banku

  •  Ingredients
  • Corn dough
  • Cassava dough
  • Cooking pot
  • Spatula
  • Salt
  • Water

Instructions

  1. Mix equal amounts of cassava and corn dough in a pan
  2. Add water to the mixture and stir till it looks porridge like
  3. Add salt to the mixture and put it on fire
  4. Stir the mixture with a wooden ladle
  5. As mixture begins to thicken, continue to stir till it becomes a thick pulp
  6. Continue to stir until color of the mixture changes to a light cream color
  7. This indicates that the banku is ready and it can be molded with a small bowl into balls

Now your Banku and Okro Stew is ready to be consumed. Dish it out into a Nice Bowl and serve with a chilled drink.
