This is how to prepare a delicious Fried Rice

Fried rice is a traditional Chinese preparation of cooked rice, vegetables, protein, soy sauce, and aromatics. The ingredients are stir-fried in a large pan or wok for even flavor distribution. An ideal use for leftovers, fried rice is quick, customizable, and incredibly simple to put together with whatever is in your fridge.

Fried rice recipe made with any fragrant  rice, carrots, peas, and scrambled egg. Fried rice is a common street food around the globe.

In most restaurants, street vendors and traveling hawkers specialize in serving fried rice. In some of the cities it is common to find fried rice street hawkers moving through the streets with their food cart and stationing it in busy streets or residential areas.

Any meat can be used, but goes best with shrimp, bacon, spam, ham, Chinese sausage, or pork. If each step is carefully followed, and the pan is always HOT when cooking, then this fried rice is sure to be a perfect one.

INGREDIENTS

  • 3 teaspoons sesame oil.
  • 3 large eggs (optional)
  • Salt
  • 2 carrots, diced
  • 3 green onions, thinly sliced, white and green parts divided
  • 3 cloves garlic, minced
  • 1 tbsp. peeled and minced ginger (from a 1″ piece)
  • 4  cooked long grain rice (preferably leftover)
  • 3/4  frozen peas
  • 3 teaspoons low-sodium soy sauce

INSTRUCTIONS

  1. Heat a large cast iron skillet over high heat until very hot, about 2 minutes.
  2. Add 1 tablespoon of oil.
  3. Beat egg with 2 teaspoons of water and a large pinch of salt and add to the skillet.
  4. Cook, stirring to form large soft curds, about 30 seconds. Transfer to a plate.
  5. Return the skillet to high heat and add 2 tablespoons of oil, the carrots, and the whites of the green onions.
  6. Cook until lightly golden, about 2 minutes.
  7. Add garlic and ginger and cook, stirring, until
  8. fragrant, 1 minute.
  9. Add rice, peas, and cooked eggs to the skillet.
  10. Pour in soy sauce and cook, stirring until heated through, 1 minute.
  11. Season with salt and pepper and stir in the remaining green onions. Fried chicken can be eaten with.
