In Ghana, bean stew is a popular dish for dinner.
However, it is currently regarded by Ghanaians, particularly Ghanaian men or young men, as a dish that will safe their lives. This is because adding gari to it makes it more sustainable, meaning that it stays in the stomach for a longer period of time, preventing frequent hunger pangs.
This dish provides a significant protein source. The flavor is excellent.
Ingredients
Dried beans, 1 cup
1 teaspoon salt in water
1 small onion
1 can of tomato sauce, 8 ounces
smoked fish weighing half a pound (smoked whiting, haddock, or whitefish)
1/4 cup of vegetable or red palm oil
1/10 teaspoon of red pepper flakes
Method
Sort and rinse the beans.
Add salt after the beans are ready, then set the stockpot aside.
Chop an onion.
Remove skin and bones from the fish after rinsing it, then chop it into small pieces.
In a frying pan, heat the oil over medium-low heat. Cook the onion till transparent after adding it.
In a frying pan, add tomato sauce and mix thoroughly before adding fish. 2 to 3 minutes of simmering.
Fill a stockpot with the frying pan’s contents.
To the stockpot, add red pepper and an extra 1/2 to 1 cup of water. Stirring occasionally, simmer the stew for 20 minutes over low heat.
Serve hot rice and fried plantains with salt and fresh grounded pepper to taste, even others take it with both fried and boiled yam, banku, kenkey etc.
