Some chefs use goat or chicken meat to achieve their desired slimness whilst other doesn’t mind though.
Ingredients For Okro Stew
- 3 pieces large onions
- 250 mls red palm oil
- 3 pieces medium-sized onions
- tomato paste
- 5 pieces bell pepper (kpakposhito)
- 2 pounds goat meat/chicken/herrings/crab/tuna/salmon
- 2 pound wele (cow hide)
- salt
- 250 mls water
Procedures
1. Thoroughly wash the meat and poultry and set them in a clean basin.
2. Chop the meat into the desired sizes and add it to a pan or cooking pot.
3. Add a small quantity of water, set the mixture over medium heat, and let it come to a boil.
4. Chop the ginger, garlic, and onions.
5. Combine pepper and chopped vegetables in a blender and process until smooth.
6. Pour the combined mixture into the meat pot and let it steam for 10 minutes.
7. Set some of the blended mixture aside.

9. Cut the okro into smaller pieces after washing.
10. Add water to the chopped okro in a clean pan and cook for about 6 minutes.
11. Remove heat source and let it cool.
12. Place a pot on a medium heat and add some palm oil.
13. Include salted fish and chopped onion.
Cook for around 4 minutes.
15. Stir in the combined pepper, ginger, and garlic, and simmer for around 5 minutes.
16. Clean, chop, and add tomatoes to the sauce.
17. Now stir in the steamed meat, boiled crab, and wele.
18. Stir and cook for approximately 10 minutes.
19. Add your cooked okro to the mixture and whisk it well.
20. To taste, add salt.
Caveats
Take note that momone, or salted fish, is already salty. So be careful how much salt you put in the okro stew.
The stew is done. accompanied by hot banku.
