Jollof comes from the Senegambia region of West Africa, particularly Senegal. There the rice dish is called thieboudienne or ceebu jen, and it is a mixture of rice, onions, tomatoes and fish.

INGREDIENTS

  • 2 large sliced spring onions
  • 1 teaspoon garlic purée
  • 4 teaspoons tomato purée
  • 3/4 teaspoon ground cinnamon
  • corned beef (optional)
  • gizzard
  • 3/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 600 grams basmati rice rinsed and drained
  • 1 large carrot peeled and cut into small cubes
  • 4.6 cups vegetable stock
  • sausage
  • meat evenly sliced
  • 5 teaspoons vegetable oil
  • salt
  • black pepper

INSTRUCTIONS

  1. In a cooking pot, pour in oil under medium heat.
  2. Add vegetable stock, tomato purée, cinnamon, ginger, nutmeg, salt and black pepper when oil heats and stir well to combine.
  3. Allow it to cook for about 5 – 8 minutes.
  4. Add in rice, carrot, pepper and spring onions into the cooking pot.
  5. Bring to a boil under medium heat for about 20 minutes then reduce heat to simmer.
  6. Add sausage and gizzard and fried cube meat.
  1. Cook for about 15 minutes more until the rice grains are cooked through.
  2. Serve warm with salad

Ghanaian Jollof Rice can be made with or without meat, but the majority of people like having the juicy, rich, and spicy meat mixed into the rice.

Jollof is smoky and spicy, with a hint of sweetness from the tomatoes. Thanks to the herbs and seasonings, it really does have multiple layers of flavor. The exact ingredients vary: Some people use seasoning cubes like Maggi or Onga while others omit bell peppers and use only tomatoes.
