Christmas is always very speacial for me in my early age because of  this Christmas special cake called Cornbread Muffins. These easy-to-make muffins are moist, fluffy and are good to munch on. This recipe yields a savoury muffin with just enough sweet to complement the cornmeal. They’re best served fresh from the oven. They taste best with chilli sauce or as a Thanksgiving side dish. This muffin recipe can be made with easily available ingredients like all-purpose flour, yellow cornmeal, sugar, salt, eggs, honey, milk and baking powder. These simple ingredients add up to make something extraordinary and this toothsome dish barely takes any time to make. This indulging snack adds an extra notch to any ordinary meal. This dish is a perfect appetizer at any given time and for any and every occasion. These muffins are also amazing as a stand-alone dish and can stuff you up well. The best part about this dish is that it pairs up with almost everything, even something as contrasting as soup.

Ingredients of Cornbread Muffins

  • 2 cup all purpose flour
  • 2 egg
  • 1 teaspoon salt
  • 1/2 cup sugar
  • 2 tablespoon sugar
  • 1 cup milk
  • 2 tablespoon honey
  • 1 cup yellow cornmeal
  • 1 tablespoon baking powder

How To Prepare it:

Step 1 Preheat the oven

To prepare these delicious muffins first preheat the oven to 180 degree Celsius. Then take a muffin pan and spray it with non-sticking spray or you can line up the pan with paper liners.

Step 2 Prepare the batter

Take a medium bowl and break up the eggs. Start whisking the eggs and while whisking add in honey and then milk. Once done let it rest. Now take a large bowl, in this bowl add flour, cornmeal, sugar, baking powder, and salt and whisk them together. After this add milk and eggs mixture and by adding the melted butter dry all the ingredients. Whisk this mixture until it is blended.

Step 3 getting ready to bake

Once the batter is prepared, evenly spoon the batter in the muffin pan. Set the mixture to bake until the tops are set and golden (approx. 20 minutes). Take out and slightly cool the muffins once done, serve warm.
